Our Story

What began in the Frogtown neighborhood of Saint Paul started with a simple goal: grow peppers.

In 2018, my partner and I finally had access to a backyard. Space was limited, but we were excited to have room to garden, spend time outdoors, and build a little green space of our own. I filled it with as many hot pepper plants as I could reasonably fit without taking over the entire yard. You know….. the sharing space with family, our dogs, and everything else we love about being outside.

Naturally, all those peppers led me to making hot sauce. The first batches, if I'm being honest, weren't very good. But each attempt taught me something new.

Around the same time, I fell deep into fermentation through kombucha and beer brewing. Which lead me to the question of bringing fermentation to the peppers. Leading from curiosity turning into obsession. I dove into peppers, flavor development, and how fermentation transforms ingredients. My partner even started a small library of fermentation and pepper books to keep up.

As I learned more, I became increasingly interested in how flavors could be combined, transformed, and elevated through fermentation. Through plenty of trial and error, I discovered that fermentation wasn't just an interesting process, it was the missing piece that could bring balance, depth, and uniqueness to my recipes.

What started as a backyard hobby soon became an obsession with flavor.

Today, we grow/gather more than 40 varieties of peppers, with focus on continuing to prioritize sustainably or locally sourced ingredients whenever possible. Every batch is carefully crafted in small quantities to ensure exceptional quality, balance, and flavor.

While not every sauce is fully fermented, fermentation plays a role in every bottle. Whether through fermented ingredients or techniques inspired by the process.

As a Cottage Food producer, we're proud to offer our products directly to customers through local markets and personal delivery. Our small-batch approach means availability is limited, but it also ensures that every jar receives the attention and care it deserves.
